Chunky Monkey

Ok folks, if you 've never had this bread before....you may want to turn away; I mean it....VIEWER DISGRETION IS ADVISED! One of my favorite things to do is try to make something from nothing (or very little). This recipe for "CHUNKEY MONKEY" bread is very high on my "something from nothing" mentality. I mean really, look closely at that shrivelled up banana. Is it possible that one could find absolute bliss from somthing so....so....nasty?!?! Well, it turns out you can! I hope that you love this recipe forever, and that you won't find yourself buying two extra bananas just so you can make it (like I do ;o). Enjoy, and have a great day...I'll be bloggin' again soon! It's a great day for taking pictures today....who knows what I'll capture next! Cheers! Trish :o)
Chunkey Monkey Bread

Preheat oven to 325 *

1/2 cup butter softened
1 cup sugar
2 eggs
2 ripe bananas
2 cups flour (if using whole wheat, only do one cup whole wheat and one cup white...trust me!)
1 tsp baking soda
1 tsp salt
1/2 cup chocolate chips ( you can use one cup...if you DARE!!!)

Cream butter sugar and eggs. Add mashed bananas, then add dry ing. Mix until creamy. Pour into greased loaf pan and bake @ 325* for 1-1&1/4 hours until a toothpick comes out clean when inserted in center. Let cool 5-10 minutes before slicing. Great chunked up and topped with ice cream for dessert! The loaf will dissapear before you know it! Happy Baking!
